This is my version of traditional english christmas pudding...sometimes called plum pudding...why? there are no plums in it!

not a great photo, this is a typical dark night kitchen shot, but it will not be unmolded for weeks, so this is aas good as it gets!

I read ALOT of recipes and ended up kind of throwing this together out of what seemed right for our guests

we have guests coming that can eat no nuts.....we hate raisins....and I refused to use shortening or suet in this.....I found a recipe that used butter and decided that sounded fine by me!

I did not measure the fruit.....and I used alot of fresh rather than dried fruits....just what I had sooo I figured I would hate this, and granted it is un steamed but it tastes great.....how could it taste worse after steaming? right? and the smell of it steaming filled the house with this fabulous scent!

my ingredients
3 large and 2 small apples
(chopped finely after being cored and peeled...peel and cores went into apple scrap vinegar...recipe here:)

3 handfuls of raw cranberries
2 oz of dried cranberries
3 oz crystallized ginger
1 T unsulphured molasses
1 T real maple syrup
3 T cinnamon (actually way more than that,,,,,the lid was off and it just dumped on in!)
6 oz stout beer
1 small carrot grated with microplane
juice of 1 1/2 meyer lemons
rind of meyer lemons and 4 tangerines with all pith and flesh removed sliced thinly and boiled in water to remove wax

all above boiled over medium heat about 30 minutes
I then removed the ginger to slice it into small pieces...it was too stale to cut through before softening!
I added the ginger back into the pan and then added
6 oz freshly squeezed tangerine juice
4 T room temperature butter
1/2 cup all purpose flour
1 t nutmeg
1/2 t sea salt
1 cup fresh bread crumbs

then in a cup I beat 1 farm fresh egg (yes taken from the hen house just yesterday! lucky us with hubby's coworker selling us eggs!) with 1 T homemade rummy vanilla and 1/2 cup fresh bread crumbs.....i then mixed this yellow paste through the pan and made sure it was all evenly incorporated

I buttered this pottery bowl and put the pudding into the bowl (actually this is the 2nd bowl...the first was too large...so I re buttered and transfered the pudding....i then buttered a fiesta saucer and layered parchment paper between the saucer and the pudding

place a large pan with about 2" of water in it and the put this in the lidded dutch oven and let the water steam it for 4 hours.....you have to keep a watch on it and add water as needed to keep the water about 1/3 way up the bowl.....let it cool to room temperature and then stuck it in the fridge for about 2 weeks...I will re steam it upon serving day with the same method for 3 hours and I am serving it with whipped cream!

(I hid a gold dollar that I boiled and then let soak in vodka to sterilize it)

I am making english holiday crackers and will have a special prize and crown for the diner that gets the gold coin!

The Menu the night we have this is
beef wellington
whiskey glazed carrots
green salad with pomegranate vinaigrette
(but I may mix it up)
we have gratin potatoes, cornbread stuffing (going into a local heritage organic bird (not sure if it will be a turkey, chicken or???) and I also want to make chestnut soup served with homemade garlic croutons, and for breakfast one day we will have pain perdu and another day homemade biscuits and sausage milk gravy....ok hungry now

really this tastes amazing!
